I’m Vimi, the author of this new low carb cookbook. Here is a little background on me and what drove me to write it. I’ve worked hard to get here, and I am super excited to be sharing this with you right now.
I took control of my health about 5 years ago when I started experiencing many problems with my digestive system. Since then, I have lost 45 lbs. and I have more energy than ever before. People are always commenting on my youthful appearance which is funny because they did not do that 10 years ago!
Many have asked me how I did it and I am always open to sharing my story. In short, I healed myself with food. I stopped eating sugar and starch and began cooking and baking low carb meals. I have created and documented 75+ recipes that I am sure you will enjoy. My objective was to make it so that there was never any need to miss foods that I thought that I had to give up eating within a low carb lifestyle. If I feel like having a donut, I make one! My recipes are all gluten-free and sugar-free. They are diabetic and celiac friendly.
Now it's time for me to share them all with you…. And now, without further ado, I would like to present to you my very first published book:
